Maybe remove shaders (manually) and rebuild it again by the Sim itself?
I saw few topic about this issue on P3D Forum but I didnt have this issue so dont know how to solve it, you can check it here: https://www.prepar3d.com/forum/index.php .
Check your saturation slider also in P3Dv5 settings.

Seems like saturation is too low. Go to setup inside the sim. Scroll down to the lighting section. Moving the saturation slider to the right will increase colors value.
Moving the slider to the left (desaturate) will make the colors become grey at some point.

Otherwise, it is a good suggestion to let the sim rebuild the shaders.
